Gluten Free No Bake Cookies

Gluten Free Oatmeal Cookies

This timeless recipe is always a fan favorite. Great for taking to a friend, a gathering, or just having on hand for visitors. In order for more people to enjoy them, make sure you choose specifically gluten free oats, because not all oats are gluten friendly. It is possible for oats (naturally gluten free) to have been cross contaminated through farming.

Gluten Free Cookies

Ingredients:

  • 2 cups of sugar

  • 2 tbs of cocoa (more or less, i just dip the tablespoon in and pour)

  • 1 stick of butter

  • 1/2 cup of milk

  • A dash of vanilla

  • 1 spoonful of peanut butter

  • 2-3 cups of oats

Instructions:

*Note: The GF oats at your local store may have to be baked before adding to the cookies.

  1. Melt your butter.  In the pot of course. 

  2. Add the sugar, cocoa, and milk, then bring to a rapid boil.  Let it boil for 1 minute and 30 seconds.

  3. Add peanut butter, let that melt.

  4. Add vanilla and oats, then quickly mix.

  5. Drop by spoonfuls onto wax paper.

  6. Let cool.
